Avocados have reclaimed a top spot in our shopping carts and for good reasons: they’re packed with nutrients, help with weight loss, and are incredibly easy to incorporate in our diets.
But did you know this creamy versatile fruit (yes, avocados are fruit) are absolutely amazing to eat as desserts too? Follow this easy recipe for an indulgent, yet healthy treat that everyone will love.
Avocado, Lime & Coconut Popsicles
The avocado’s creamy texture mixed with the coconut’s sweetness and tangy lime is a refreshing explosion of tropical flavors. Trust me, you will feel like you’re on holiday with every bite! Did I mention these require less than 5 ingredients?
2 large avocados, peeled & diced
2 Tbsp honey* (optional)
4 Tbsp of lime juice
1 tsp lime zest
1½ cups coconut water (or just plain water)
1. In a small bowl, mash together the avocado and honey. Transfer to a blender or food processor. Add in the lime’s juice, zest, and coconut water and blend until smooth, scraping down the sides as needed.
2. Transfer to popsicle molds and freeze for at least 7 hours. Unmold and enjoy!
* Add raw honey if you’re on a paleo diet.
